DENVER

As a recent transplant in Denver, I've loved exploring new restaurants.  Here are my go-tos:

THE POPULIST
If I had to sum up Denver in a single dining experience, The Populist would be it.  Everything about this restaurant is a 10.  From the always-changing shared plates menu to the friendly team service approach, the experience is top notch.  In the summer, the outdoor patio is a gem.  The tandoori chicken and green curry jackfruit are always on the menu and worth trying, and the burger is argued to be the best in the city.  
ACORN
Located in The Source, a renovated epicurean marketplace in RiNo (River North).  Their shared plates menu is always creative and seasonal, and the cocktail menu is equally inventive.  Try the Acorn Negroni or my favorite, the Monks Garden (basil and tarragon infused vodka, green chartreuse, cucumber, lavender, lime).  
SUSHI DEN
True, there's no ocean in sight, but you wouldn't know it at Sushi Den.  Their fish is flown in daily and is very high quality.  My advice: ignore the set menu and go straight for the paper insert with the daily specials.  Ask your waiter for their recommendations, and go from there.  My favorite is to order an assortment of nigiri and sashimi, chef's choice.  No reservations on weekends- so plan to get there early and walk around Pearl Street until your table is ready.

There is the opposite of a restaurant group establishment, and its quirky charm will win you over.  The wait staff are all having a great time, you'll feel like you're hanging out with friends.  Start off with one of their cocktails, and ask for their Black List of specials.  The menu consists mostly of small bites-- from tostadas to lettuce wraps to buns, with more substantial shared plate options like skirt steak over arugula or roasted quail.  There is a sister location in Telluride (see Telluride page).  
AVELINA
You can't go wrong with Avelina.  It's not as casual as the majority of Denver's restaurants, yet it's by no mean fancy.  They have a variety of appetizers like charcuterie, charred octopus, and beef carpaccio salad.  Heartier entrees include risotto, lamb T-bone, and short rib.  During the week they are open for lunch and stay open through dinner, so it's one of my favorite spots for an outdoor cocktail and app.  
SUSHI RONIN
Although Sushi Ronin may not be as famous as Sushi Den, I would argue it's as good.  Located in LoHi (Lower Highlands), I've had consistently good meals here.  My favorite experience, of course, is sitting at the sushi bar and letting the chef do their magic.  
CHO 77
Located in the South Broadway Baker neighborhood, Cho 77 is a casual eatery with Southeast Asian influenced street food. Flavors of Thailand, Vietnam, and Singapore rotate on this season menu.  Perfect for lunch or a casual dinner.
